Lemon Pudding

Ingredients (for 4 servings):
1 cup soy milk, divided
5 tb cornflour
1/8 tsp turmeric
75 ml agave/maple syrup
1 whole 400 ml can full-fat coconut milk
150 ml fresh lemon juice
Lemon peel from 1 lemon, in one piece if possible
Optional garnish: caramelized lemon rind, fresh or frozen fruit, etc.


Instructions:
1. Dissolve corn flour and turmeric with a small amount of the soy milk.
2. Add the rest of the soy milk, agave, coconut milk, lemon juice, and lemon peel to a pot and bring to a bowl over medium heat, whisking continuously.
3. When it heats up, add the corn flour mixture and keep whisking until it thickens and starts bubbling.
4. Remove the lemon peel and transfer the pudding to 4 bowls.
5. Garnish according to personal preference.
6. Refrigerate for a few hours before serving.

Note: You can also use this pudding as a base for a trifle.
